There are many different buzz words that explain this phenomenon: flexitarian, semi-vegetarian, and week day vegetarian; where you only eat meat on the week-ends. But anyway you want to say it, you are cutting back on the meat you eat. Some do it for health reasons, animal rights, the environment or all of the above!

Happy Mother's Day

So after a messed up dinner out to eat... my food server was great about it but mushrooms and I don't agree.. I was hungry for something sweet... and I remember a pin from pinterest for Cheesecake stuffed strawberries .  I have the strawberries and the creamed cheese
....  I didn't have the graham cracker crumbs but oh well I will try it without.
The little cover bakers where a gift for the daughter. Plus there is flowers too.

 8 ounce package of cream cheese (soften)
1/4 cup of powder sugar (can use more if want it                  sweeter)
 1 teaspoon of vanilla

Mix this together and stuff into strawberries that have the top cut out and hollowed.  Some are like that already.
They tasted great with the graham cracker crumbs but if you have some you can dip the cream cheesed filled strawberries into the crumbs....

The small white container is going to work with me tomorrow.  think my co-workers will be jealous??

The hardest thing is not eating to many as you make them.. I ate a few...  what? Yea a few or more...

Bee Quick Baking Mix REmake.....

Baking Mix Recipe

4 1/2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon baking soda
2 tablespoons white sugar
1 teaspoon salt
3/4 cup dry nonfat milk
1 cup shortening

n a large bowl, combine the dry ingredients. Cut in shortening until the mixture resembles coarse crumbs. Store in an airtight container in a cool dry place (will keep up to 6 weeks), the refrigerator for longer (about 3 months) or in the freezer for up to 8 months.


Quick Dumplings

2 1/2 cups of baking mix
2/3 cup milk

Stir together until mix forms a soft dough. Drop tablespoon full of dough into hot stew. Cook 10 minutes uncovered then 10 minutes covered.

Biscuits:

Mix 2 cups of Baking Mix with 1/2 cup milk. Bake at 450 degrees F for 8 to 10 minutes.


Pancakes:

Mix 2 cups of baking mix with 1 beaten egg and 1-1/3 cup milk.

or-
add 2 tbsp. sugar
2 tsp baking powder
1 tsp vanilla

  Waffles:

2 cups of Baking Mix
2 eggs
2Tbsp oil
1-1/3 cup milk.

Muffins

2 cup  baking mix
2/3 cup milk
1/3  cup sugar
1tbsp  vegetable oil
1 tbsp unsweetened applesauce
1 egg

Oven temp: 400  Line or grease the bottom of 12 muffin cups.
Stir all ingredients until moist. Over stirring can cause a tough muffin.....

can add 3/4 cup of fresh or  frozen fruit. Fold in gently.

If using grated apples can add a tsp of cinnamon for favor.  

Bake at 400*F for   13 to 18 minutes or until golden brown.


Oven baked coating

1 tbsp butter
2/3 cup baking mix
1 tsp garlic powder
1 tsp Italian seasoning
1/4 tsp pepper

Now I can make my recipes with non-bleached flour and without preservatives!! Cheaper....

Flour Tortillas! Ole!

It is Thursday! 8 Muddy Boots Mister Linkys from scratch time!

What did I make from scratch this week....

Devil Eggs........ of course!

Peanut Granola that was ok but needs something (I am working that out to make better!!)

Last night I wanted some veggie tacos and sure enough I had NO flour tortillas

So I searched online and found a recipe for 24... not that many so I cut the recipe in half and got 6 (humm I do like bigger  tortillas....)

2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon shortening
3/4 cup water
Mix dry ingredients together.
Using a fork I cut the shortening in to the flour mix.
Add water slowly to moisten but don't get too wet.
Knead for a minute or two to mix together.
Let stand for 10 minutes. I started my veggies!!
Divide into 12 equal parts.
Heat a skillet over medium high heat.
Roll out on floured surface. Should be a 6 inch circle....  That when i saw it was way to small need to add more! LOL  But make sure the dough is rolled out very thin (the first way to thick, oh well I was learning)
Place on the skillet.  cook for about 30 seconds to a minute  and turn.  they should have some brown spots and loose their wet appearance.
Cook the other side until it looks the same way.
Yea like I said the first one was too thick but it tasted good.......... the second one was better... I think this would be great for Quesadillas...  yummm maybe for tonight's dinner??
