There are many different buzz words that explain this phenomenon: flexitarian, semi-vegetarian, and week day vegetarian; where you only eat meat on the week-ends. But anyway you want to say it, you are cutting back on the meat you eat. Some do it for health reasons, animal rights, the environment or all of the above!

No Yeast Pizza Crust Recipe.

My new found trying things with out gluten had me wanting some pizza like crazy.  I thought after reading many sites that to start out at using half of the flour with a gluten free flour, I try that.  I have done really good at not eating much gluten.  I have gotten the it's a cook-out come on have a burger!! PS I found I still enjoy them without a bun... but here is the recipe I used for my pizza crust.... I decided to do a yeast free recipe:

 1 cups all purpose flour
1 cup of gluten free flour mix
1 tbsp baking powder
 1/4 tsp salt
 2/3 cup water
1 tbsp cooking oil

  Preheat oven to 400 degrees.

Grease  pizza pan.
Combine dry ingredients.
Add water and the oil and stir.
Knead dough by hand 6-8 times on a lightly floured surface.
Pat  dough onto prepared pizza pan, add favorite sauce and toppings.
Bake at 400 degrees for 18-20 minutes, depending on crust thickness.

Indian Fry Bread Recipe

Ingredients:

 1 cup unbleached flour
1/4 teaspoon salt
1 teaspoon powdered milk
1 teaspoon baking powder
1/2 cup water
Vegetable oil for frying

Mix flour, salt, powdered milk, and baking powder into a large bowl. Pour the water over the flour mixture all at once and stir the dough with a fork until it starts to form one big clump.
Flour your hands. Mix the dough, trying to get it to form a ball. You want to mix this well, but you do NOT want to knead it. Like you would with biscuits. Over mixing make them tough tasting.
Divide into 4. Roll out until they are 5 to 7 inch in diameter .
Heat one inch or so of the vegetable oil in a heavy pan. When it reaches 350 degrees place one circle in the hot oil.  Fry for about 3 minutes or until brown.  You do want to try to push down on the dough to help it brown.  Careful of the hot oil splashing.. It will get bumpy and lumpy but that is ok.

Place on a paper towel to absorb hot oil.    They can be placed in a oven at 200 to keep warm if needed. You can refrigerate them and reheat in a 350 degree F. oven for 10 to 15 minutes before serving.

Sprinkle cinnamon and sugar on hot fry bread for sweet treat!!!

Refrigerator Oatmeal

With Pinterest I found this pin that had a recipe for refrigerator oatmeal. I am not a big fan of yogurt. I use greek yogurt instead of sour cream! So I had to try this but first I tried it with less yogurt that called for, maybe I could do a little bit of yogurt if I use the vanilla favored...

1/4 cup uncooked old fashioned oats
1/3 cup skim milk
2 tablespoons vanilla favored yogurt
1-1/2 teaspoons dried chia seeds
2 teaspoons maple syrup
 1/4 cup blueberries

 Directions
In a half pint jar, add oats, milk, yogurt, chia seeds, and maple syrup. Put lid on jar.
 Shake until well until combined.
Add your blueberries and stir until mixed throughout. Refrigerate overnight or up to 2 days. Eat chilled.

Maybe try it with something else like applesauce or smashed bananas???

 1 cup low fat milk
 1/2 cup old fashioned oats
1/4 cup frozen blueberries or raspberries
 1/3 cup unsweetened applesauce

 Directions

Mix milk, oats and applesauce in a jar. I used a old ice cream topping jar.
Can add salt, if desired. Shake to mix. Stir in berries. Refrigerate overnight.

I used almond milk mixed with regular milk. Both where really good! Shocking but true... LOL

Agua Fresca

Translated as "fresh water". Sometimes known as Aguas de Frutas translated= "fruit waters". Fruit water without the plastic bottle, preservatives and dyes of the bottled. Traditionally the water are made by mashing fruit then adding water and sweetener.

For honey use a small amount of hot water to help mix the honey into the drink.
If you use a blender don't all all the water in recipe just enough to make it drinkable.
Never add ice this is dilute the fruit flavors. Place in the refrigerator until cold. Use cold ingredients.....

Strawberry Agua Fresca

* 3 cups hulled and quartered strawberries
* 1/4 cup sugar (more or less depending on sweetness of the berries)
* 2 cups cold water
* 1/4 cup fresh-squeezed orange juice

Watermelon  Agua Fresca
1 1/2 cups watermelon, diced (no rind)
5 cups cold water
1/4 cup sugar

Blend for a minute or two until the seeds break up . Let the  seeds fall to the bottom and should stay in the bottom when you pour.  You could use a strainer if you like to make sure the seeds don't get added to the drink..

  Melon Agua

1 ripe cantaloupe or honey dew peeled, seeded and diced
2 qts cold water
1/2 cup sugar

Wacky Spaghetti

Wacky Spaghetti is spaghetti that was made from one of those days hurried meal. WAY Before Wacky Mac....... And to think I had this idea years before they came out with a product like this... Ummm maybe I should have copyrighted it... LOL
I had extra cooked elbow macaroni I thought goulash, but not enough for 4 people........ So I grabbed the box of noodles sure enough the box had very little. Same with many noddles and even the rice box. So I cooked them together! And Wacky spaghetti was born (by the way it was first called garbage! because they couldn't say goulash and said it looks like garbage!!)

What ever noodles you have spaghetti, lasagna, or whatever. Add spaghetti sauce......
