There are many different buzz words that explain this phenomenon: flexitarian, semi-vegetarian, and week day vegetarian; where you only eat meat on the week-ends. But anyway you want to say it, you are cutting back on the meat you eat. Some do it for health reasons, animal rights, the environment or all of the above!

Choclate Fudge Icing

 1/2 stick  butter

3 cups sugar

1 cup carnation milk

1/2 cup milk

3 1/2 blocks baking chocolate

1/4 tsp salt

 

In sauce pan stir together. scraps sides until reaching soft ball stage. Remove from heat and add:

1/2 stick butter

1 tsp vanilla

1/2 tsp lemon favor

 

BEAT do not stir.

Nutella and whipped cream

So did I tell you that it is getting so hot here.... I found another fudgesicle recipe I had to try!


1 cup whipped cream topping
1/2 cup almond milk
3 Tbsp. Nutella

Place all ingredients in a blender. Blend well, then pour into popsicle molds. Freeze until set.







OMG these are so good..... BUT Miss Animals Rights doesn't like Nutella.... SO I used Jif Chocolate Silk.... and they didn't taste that good... Oh well more for me... She did say maybe if I used chocolate milk.  I don't think I will try that, wasn't that impressed with the peanut taste.

Reese's Pieces Chocolate Peanut Butter Cookies

Ingredients:

1 stick unsalted butter, softened
1 cup peanut butter,
1 1/2 cups brown sugar
2 tablespoons honey
2 eggs
1 tsp vanilla extract
2 1/3 cups flour
1/3 c cocoa powder
1 tsp baking soda
2 1/4 cups Reese’s Pieces, frozen
Directions:


1. Preheat oven to 350 degrees. Cream butter, peanut butter, sugar, and honey until smooth. Add vanilla and eggs, one at a time, and stir until incorporated.

2. In a separate bowl, sift together flour, cocoa powder, and baking soda. Slowly add dry ingredients to the peanut butter mixture. Stir in the Reese’s Pieces. It’s mandatory that you should eat a few to make sure they are safe.

3. Drop or roll into balls onto cookie sheets lined with parchment or a silicone mat. These cookies do not spread much, so only an inch apart is necessary.

4. Bake for 8 to 10 minutes. Allow to cool for at least two minutes before removing with a spatula to a wire cooling rack.

Chocolate..........

Chocolate Syrup

* 1 cup cocoa powder (unsweetened)
* 2 cups sugar (can use 1/2 dark brown sugar and 1/2 granulated sugar)
* 1/4 teaspoon salt
* 1 cup cold water
* 1 tablespoon vanilla

Combine cocoa and sugar and blend until all lumps of cocoa are gone. Add water and salt and mix well. Cook over medium heat, bringing it to a boil. Keep boiling until thick, stirring to keep from overflowing. Remove from heat and let cool. When cool, add vanilla. This is great for chocolate milk, hot cocoa, and ice cream topping.

Note: This is NOT fudge sauce. It is fat-free syrup and will not be as thick as fudge.


Hot Fudge Sauce

1 c. white sugar
2 tbsp. flour
1/3 c. cocoa
2 tbsp. butter
1 c. milk

Mix together in a small saucepan. Bring to a boil over medium heat, stirring constantly. Boil until sauce thickens. (Hot fudge sauce will continue to thicken as it cools.)
