There are many different buzz words that explain this phenomenon: flexitarian, semi-vegetarian, and week day vegetarian; where you only eat meat on the week-ends. But anyway you want to say it, you are cutting back on the meat you eat. Some do it for health reasons, animal rights, the environment or all of the above!

White Chocolate Peanut Butter melts

I found a recipe on Pinterest for Chocolate Peanut Butter melt aways.  I can't find in now but remember that it was 1/2 semi-sweet chocolate chips 1/2 peanut better and a teaspoon of coconut oil.


So when I was craving them I first look on my piniterst for the recipe and didn't find oh well I'll my luck. They where great.  I was craving them but when I started to make them I found that all I had on hand was white chocolate chips! AND guess what they taste like reeses pieces!

I also have tired almond butter too. Almost like a almond joy!!

Gluten Free Peanut Butter Cookies

1 Cup Sugar*
1 Large Egg, Slightly Beaten
1 Cup Peanut Butter (Smooth)

*Brown sugar makes them more chewy, white sugar makes them more crisp, and sugar substitutes  makes them crumble. I like to do 1/2 cup of each type of sugar.

Preheat oven to 350
Mix  all ingredients
Drop by teaspoon   onto an un-greased cookie sheet
Bake for 8 to 12 minutes

Gelato Recipe




2 cups whole milk
¾ cup sugar
1 pinch salt
3 Tablespoons cornstarch (rice starch could also be used)
1 cup heavy cream


     Directions:
 Warm milk, sugar and salt in a sauce pan.
 In a separate dish, whisk the cornstarch into the heavy cream. Once completely dissolved, add this mixture to the milk mixture.

 Heat the mixture, stirring constantly until it begins to boil and bubble up. Reduce the heat and simmer for 2 minutes, stir constantly.

Remove from heat and scrape into a bowl. Chill thoroughly in the refrigerator, stirring occasionally as it cools.
 Once chilled, whisk once more to remove any lumps then process in your ice cream machine per the manufacturer's instructions.

Hawaiian Bread

ingredients:
3 to 3 1/2 cups all-purpose flour
1 pkg.(1/4 oz.)active dry yeast
1 can(8 1/4 oz.)crushed pineapple
1/4 cup sugar
1/2 tsp. salt
1/4 cup butter or margarine
1 medium banana, mashed
1 egg, beaten


In large bowl, combine 1 1/2 cups flour and yeast; set aside. Drain pineapple in a sieve, pressing out as much juice as possible. Reserve juice in a 1-cup measure; add water to make 1/2 cup. Pour juice into small saucepan. Add sugar, salt and butter. Stir mixture constantly over medium-high heat until butter softens. Add juice mixture, banana and egg to flour mixture. Beat 1 minute with electric mixer on low speed. Scrape batter from sides of bowl; beat 2 minutes longer at high speed. By hand, stir in enough remaining flour to make a soft dough. Stir in drained pineapple. Cover bowl with towel; let rise in a warm place, free from drafts, until doubled in bulk, 1 to 1 1/2 hours. Stir down dough. Grease a 2-quart casserole with high sides or a souffle dish. Turn dough into dish. Cover with towel; let rise 45 minutes.

Preheat oven to 375 degrees F. Bake until golden brown, 30 to 40 minutes. Cool in dish 5 minutes; remove from dish.

Snow icecream

                 1/4 to 1/2 cup whole milk                                  
1-2 tablespoons sugar (or to taste)
                 1/2 teaspoon vanilla                                          
             1 1/2 cups (more or less) clean, fresh snow



mix the milk, sugar and vanilla together.
Pour the sweetened milk over the snow, stirring to combine.  Mix as thick as you like.  More sweetened milk the thinner the ice cream will be.

    Caramel Sauce.

    Ingredients: 
    1/2 cup butter
    1 1/2 cups brown sugar
    3/4 cup light corn syrup
    1 can (14 ounces) sweetened condensed milk
    1 teaspoon vanilla


    Instructions: 

    In a 2-quart saucepan, melt butter on low heat.
    Add brown sugar, corn syrup, and milk, stirring to combine. Increase heat to medium heat.
    Stir constantly bring to a boil. Remove from heat and whisk in the vanilla.
    Serve warm or cold with apple slices, or drizzle over ice cream.

    Her favorite: Rice Krispie Treats


    Rice Krispie Treats....
    • 3 tablespoons  butter or margarine
    • 1 package (10 oz., about 40)  regular marshmallows
    • - OR -
    • 4 cups  miniature marshmallows
    • 6 cups  Rice Krispies®
    1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
    2. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.

    3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.


    MICROWAVE DIRECTIONS:
    In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.


    So looking at the Kellogg's Rice Krispie site I found Pizza Treats!!
    I had to laugh
    Make the Rice Krispie treats the same way but press into pizza pan.
    Spread strawberry jam on top for "tomato sauce". Carefully spread frosting over jam for "cheese". Add fruit roll-up circles for "pepperoni". Top with sprinkles. Cut into slices to serve. Best if served the same day.
    Isn't that a GREAT Idea for a kids get together!!
