There are many different buzz words that explain this phenomenon: flexitarian, semi-vegetarian, and week day vegetarian; where you only eat meat on the week-ends. But anyway you want to say it, you are cutting back on the meat you eat. Some do it for health reasons, animal rights, the environment or all of the above!

Banana Bread

I have 5 very ripe bananas and Miss Animal Rights asking for banana bread. So here we go:

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1/2 cup sugar   
  • 1/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1 egg, beaten
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  • handful of chopped walnuts
Preheat the oven to 350°F (175°C).
With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugars, cinnamon, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix. Fold in walnuts
Pour mixture into a buttered 4x8 inch loaf pan. 
Bake for 1 hour. Cool on a rack. 
Remove from pan and slice to serve.
